Featured in Women’s Health: The Ultimate Tired-Day Meal

I am elated to have been featured in Women’s Health UK. I was asked to contribute to their piece regarding a challenge we all face: how to eat well when energy levels are at zero and the “mental load” of meal planning feels like too much. 

The article, “How to eat healthy when you’re too tired to think: 16 nutritionists share their easy staples”, looks at the go-to meals that experts actually eat when life gets a bit overwhelming.

Side note: research indicates that women are significantly less likely to share their achievements compared to men, and as International Women’s Day has just passed this post of my feature feels timely!

 

My 30-Minute, Zero-Prep Staple

When a journalist asked for my personal “emergency” meal, my answer was simple: Frozen Fish.

In my nutritional therapy practice, I often find that people feel they have to cook everything from scratch using fresh ingredients for it to be “healthy.” In reality, the freezer is one of the most powerful tools for maintaining a nutrient-dense diet without the stress.

My personal favourite is keeping frozen basa fillets on hand. When I am exhausted, I simply pop two in the oven with a homemade spice mix. I add one or two sweet potatoes (quartered to ensure they cook quickly) on the same tray. While those roast, I steam a cup of frozen mixed vegetables on the hob.

Why This Works

This meal is a staple for me because it hits every nutritional requirement with almost no effort:

  • Lean Protein: Basa is a fantastic, light source of protein that supports muscle repair and satiety.

  • Complex Carbohydrates: Sweet potatoes provide slow-release energy, which is exactly what you need when you are already feeling drained.

  • Fibre and Micronutrients: Frozen vegetables are often frozen at the point of harvest, meaning they retain excellent levels of vitamins and minerals.

  • Minimal Processing: Despite being “convenience” food, these ingredients are minimally processed and free from the hidden additives often found in takeaways.

It takes around 30 minutes, requires no endless chopping or prep, and leaves me feeling nourished rather than sluggish.
