We have some amazing vegan, plant-based dishes too. No disrespect to Jerk Chicken by the way ๐Ÿ˜†. Here’s one of my ERN dishes or should I say ERN Quarantine Dishes? Can you tell that I’m dreaming about Jamaica…๐Ÿ‡ฏ๐Ÿ‡ฒ. Everything on my plate is very nutrient-dense. I’ve just focused only a few nutrients for each item.

๐Ÿฅฌ๐Ÿ‡ฏ๐Ÿ‡ฒ CALLALOO

Leafy green vegetable. Rich source of iron and vitamin C. High in calcium for strong bones and teeth.

๐Ÿฅฌ๐Ÿ‡ฏ๐Ÿ‡ฒ GREEN BANANA

May have an appetite-reducing effect due to their high content of fibre and resistant starch (which cannot be digested but promotes healthy gut bacteria).

๐Ÿฅฌ๐Ÿ‡ฏ๐Ÿ‡ฒ PLANTAIN

Also from the Musaceae banana family. Rich source of fibre, vitamins A, C, and B-6, and the minerals magnesium and potassium (as I said all these foods are nutrient-dense!).
The high amount of potassium is essential for maintaining the cell and body fluids that control our heart rate and blood pressure.
